Sweet and hearty vegan rolls

That was such a difficult recipe, but we managed to tune it! We created two versions just for you – for those, who wants to fill their stomach, and for those, who wants to treat themselves with some sweets – delicious berries and fruits.

Apple, cherry and nuts rolls – that’s the best choice for those, who don’t know what to offer to their friends at late evening or just want to diversify their sweet diet. Hearty rolls with mashed potato and mushrooms fit perfect to those, who don’t want to waste a lot of time for cooking, but want some fill food :).

Ingredients

  • 3 unit mushrooms
  • 2 unit potato
  • 1 unit tortilla (rectangle, round won't work)
  • 1/2 cup semolina (you'll use just a tiny portion)
  • 2 teaspoon salt (for potato and mushrooms)

  • 1 handful nuts (walnut is the best choice)
  • 1 handful cherry
  • 1 unit tortilla (rectangle, round won't work)
  • 1/2 cup semolina (you'll use just a tiny portion)
  • 2 teaspoon sugar
  • 2 teaspoon cinnamon
  • 1 teaspoon vanillin (small pack)

Instructions

Hearty rolls

  • Chop the onion and grate mushrooms.
  • Put chopped onion and mushrooms to the pre-heated frying pan. Don't forget to stir occasionally. Fry untill the onion is golden and mushrooms are cooked.
  • Clean and cut potatoes, boil it.
  • Mash boiled potatoes.
  • Put the tortilla sheet (lavash) on the flat surface and split it in your mind into two parts. Add mashed potatoes on the right half sheet, evenly distribute it.
  • Fold the tortilla in half, add mushrooms.
  • Roll the tortilla sheet - very carefully, but tightly.
  • Cut tortilla to rolls - each one should be about 2.5-3 centimeters.
  • Add plenty of oil to the frying pan and heat it.
  • Roll the rolls on both sides in the semolina and gently put them to the frying pan. If the rolls begin to unfold, simply lay them tightly together. Fry each side for about 2 to 3 minutes.
  • Gently remove rolls from the frying pan, you can use paper towel to reduce excess oil. Let them cool slightly and start the meal! 🙂

Tasty rolls

  • Peel the apples and grate them.
  • Add some hot water to the cherry (2/3 of the volume of the cherry), cover it with sugar. Mix thoroughly and let it rest for a while (about 5 to 7 minutes), until the sugar is absorbed and gives additional juice (syrup).
  • Sieve the cherry, get the syrup.
  • Drain the syrup to the frying pan and add grated apples. Add sugar and vanilla, mix them. Get a syrup boil and strain the filling from the syrup.
  • Put a tortilla sheet (lavash) and split it in your head into two parts. Put the syrup-soaked apples on the right half sheet.
  • Put the cherries on apples, add cinnamon on top.
  • Add semolina on top of the cherry.
  • Fold the sheet in half, if half was incomplete, fit it (as in the video).
  • Add a little water to a new layer of tortilla (use a brush), then add the chopped nut.
  • Very carefully, but tightly roll the tortilla sheet. Do not damage it, otherwise the rolls will fall apart during cooking.
  • Cut tortilla to rolls - each one should be about 2.5-3 centimeters.
  • Add plenty of oil to the frying pan and heat it.
  • Roll the rolls on both sides in the semolina and gently put them to the frying pan. It takes about 3 minutes to fry each side.
  • Gently remove rolls from the frying pan, let them cool a little big and bon appeti! 🙂
